Prep your tools and oven. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
This prevents sticking and helps the cookies bake evenly.
Whisk the dry mix. In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Set aside so it’s ready to go.
Cream the butter and sugars. In a large bowl, beat softened butter with granulated and brown sugar until light and fluffy, about 2–3 minutes. This step adds air, which helps the cookies puff and crackle.
Add the egg and vanilla. Beat in the egg and vanilla until smooth and combined. Scrape down the bowl so nothing sticks to the sides.
Mix in the pumpkin. Stir in the pumpkin puree until just blended.
The mixture may look slightly curdled at first—don’t worry. It will smooth out when you add the dry ingredients.
Combine wet and dry. Add the flour mixture in two additions, mixing on low until no dry streaks remain. Avoid overmixing.
If using chips, nuts, or zest, fold them in now.
Set up your sugar roll. Place the granulated sugar and powdered sugar in separate shallow bowls. This double-coating gives you a vivid white crinkle top.
Portion the dough. Use a tablespoon or small cookie scoop to portion 1.5-tablespoon mounds (about a heaping tablespoon). The dough will be soft and slightly sticky—that’s normal.
Roll and coat. Lightly dampen your hands, roll each scoop into a ball, coat in granulated sugar, then generously roll in powdered sugar. Don’t skimp on the powdered sugar; it’s what creates those classic cracks.
Bake in batches. Arrange on the baking sheets, spacing about 2 inches apart.
Bake 10–12 minutes, until the tops are cracked and set at the edges but still soft in the center. They will continue to firm up as they cool.
Cool completely. Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack. Cooling helps the crust set and preserves that pretty crinkle.
