Pumpkin Cream Cheese Swirl Bread - Cozy, Moist, and Perfectly Spiced

Ingredients
  

  • For the Pumpkin Bread
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (110 g) light brown sugar, packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup (240 g) canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) neutral oil (vegetable, canola, or light olive oil)
  • 1/3 cup (80 ml) milk (dairy or unsweetened non-dairy)
  • 2 teaspoons vanilla extract
  • For the Cream Cheese Swirl
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour (to help set the swirl)
  • Optional Topping
  • 1–2 tablespoons coarse sugar for sparkle

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a parchment sling. This makes it easy to lift the bread out cleanly.
  2. Make the cream cheese swirl: In a medium bowl, beat the cream cheese, sugar, egg yolk, vanilla, and flour until smooth and creamy. Set aside. It should be thick but spreadable.
  3. Whisk the dry ingredients: In a large bowl, whisk flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until no lumps remain.
  4. Mix the wet ingredients: In a separate bowl or large measuring cup, whisk pumpkin puree, eggs, oil, milk, and vanilla until fully combined and silky.
  5. Combine: Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix; a few small streaks of flour are okay.
  6. Layer the batter and swirl: Pour about half of the pumpkin batter into the prepared pan and smooth the top. Spoon the cream cheese mixture over the batter in an even layer. Add the remaining pumpkin batter on top and smooth gently.
  7. Swirl: Use a butter knife to make a few figure-eight swirls through the batter, reaching down into the cream cheese layer. Don’t over-swirl; 3–4 passes are enough to create a pretty pattern.
  8. Top and bake: Sprinkle coarse sugar on top if using. Bake for 55–70 minutes, or until a toothpick inserted into the center (avoiding the cream cheese pocket) comes out with just a few moist crumbs.
  9. Cool: Let the loaf cool in the pan on a rack for 15 minutes. Lift it out using the parchment and cool completely before slicing. The cream cheese swirl needs time to set.
  10. Slice and serve: Use a sharp serrated knife to cut neat slices. Enjoy warm or at room temperature.
