Pumpkin Cheesecake Brownies - Fudgy, Swirled, and Perfect for Fall

Ingredients
  

  • For the brownie batter: 1/2 cup (115 g) unsalted butter
  • 1 cup (170 g) semi-sweet chocolate chips or chopped chocolate
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (95 g) all-purpose flour
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1/2 teaspoon fine salt
  • For the pumpkin cheesecake swirl: 8 ounces (225 g) cream cheese, softened
  • 1/2 cup (120 g) pumpkin puree (not pumpkin pie filling)
  • 1/3 cup (65 g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon + 1/4 tsp ginger + 1/8 tsp nutmeg + 1/8 tsp cloves)
  • 1 tablespoon all-purpose flour
  • Optional: A pinch of salt to balance sweetness
  • To finish: Flaky sea salt, for sprinkling (optional)
  • Equipment: 8-inch square baking pan
  • Parchment paper
  • Mixing bowls and whisk
  • Spatula and butter knife for swirling

Method
 

  1. Prep the pan and oven: Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving overhang for easy lifting. Lightly grease the paper.
  2. Melt chocolate and butter: In a heatproof bowl, melt butter and chocolate together in the microwave in 20–30 second bursts, stirring between each, until smooth. Cool 5 minutes.
  3. Mix sugars and eggs: Whisk granulated sugar, brown sugar, eggs, and vanilla into the melted chocolate until glossy and thick.
  4. Add dry ingredients: Sift in flour, cocoa powder, and salt. Fold gently with a spatula until just combined. Do not overmix. Set aside.
  5. Make the pumpkin cheesecake mixture: In a separate bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, egg yolk, vanilla, pumpkin spice, flour, and a pinch of salt. Mix until creamy with no lumps.
  6. Layer and swirl: Spread about 2/3 of the brownie batter into the prepared pan. Dollop spoonfuls of the pumpkin mixture over the top, then add the remaining brownie batter in small scoops. Use a butter knife to gently swirl, pulling through the layers in figure-eights. Aim for 3–4 passes so you keep distinct ribbons.
  7. Bake: Bake 32–38 minutes, until the edges are set and the center looks slightly glossy but not jiggly. A toothpick should come out with a few moist crumbs, not wet batter.
  8. Cool completely: Set the pan on a rack and cool to room temperature. For the cleanest slices and best texture, chill at least 2 hours before cutting.
  9. Finish and serve: Lift out with parchment, slice into squares, and, if you like, sprinkle a little flaky sea salt on top for contrast.
