Ingredients

  • Peanut butter: Creamy works best for smooth centers; crunchy adds texture.
  • Unsalted butter: Softened; helps the filling set and hold shape.
  • Powdered sugar: Sweetens and thickens the peanut butter mixture.
  • Vanilla extract: Adds warmth and rounds out the flavor.
  • Salt: Just a pinch to balance the sweetness.
  • Chocolate: Semi-sweet or milk chocolate chips, or chopped bars for dipping.
  • Coconut oil or shortening (optional): Thins the chocolate for easier coating.
  • White chocolate or white icing: For the football “laces.”
  • Tools: Mixing bowl, hand mixer or sturdy spoon, baking sheet, parchment paper, microwave-safe bowl (or double boiler), fork or dipping tool, piping bag or zip-top bag for laces.

Method

  1. Make the peanut butter base: In a large bowl, beat 1 cup peanut butter with 4 tablespoons softened unsalted butter until smooth and creamy.
  2. Sweeten and thicken: Mix in 1 teaspoon vanilla and a pinch of salt. Add 2 to 2 1/2 cups powdered sugar, about 1/2 cup at a time, until the mixture is thick and moldable. It should feel like soft cookie dough—stiff, not sticky.
  3. Chill briefly: Cover and refrigerate for 20–30 minutes. This makes shaping easier and keeps the centers from crumbling.
  4. Shape the footballs: Scoop about 1 tablespoon of mixture and roll into an oval. Pinch both ends slightly to create a football shape. Place on a parchment-lined baking sheet. Repeat until all the mixture is used.
  5. Chill again: Freeze the shaped centers for 15–20 minutes. Cold centers are key for a clean chocolate coat.
  6. Melt the chocolate: In a microwave-safe bowl, melt 12 ounces of chocolate with 1–2 teaspoons coconut oil in 20–30 second bursts, stirring between each, until smooth. Or use a double boiler on low heat.
  7. Dip and coat: Using a fork, dip each chilled peanut butter football into the melted chocolate, letting excess drip off through the fork tines. Set back on the parchment. If the chocolate thickens, gently rewarm it.
  8. Set the shells: Let the chocolate firm up at room temperature, about 20–30 minutes, or pop the tray in the fridge for 10 minutes.
  9. Add the laces: Melt a small amount of white chocolate or use white icing. Transfer to a piping or zip-top bag with a tiny snip. Pipe one long line across the top center, then 3–4 short lines across to mimic laces.
  10. Final chill: Refrigerate for 10 minutes to set the laces. Serve chilled or at cool room temperature.
