Ingredients

  • Butter: 1/2 cup (1 stick), melted, for the topping.
  • Brown sugar: 3/4 cup, packed, for that caramel layer.
  • Pineapple: 1 can pineapple rings (20 ounces), drained, juice reserved; or 2 cups tidbits.
  • Maraschino cherries: 10–12, optional but classic.
  • Cake mix: 1 box yellow or pineapple cake mix (15.25 ounces) or your favorite vanilla cake mix.
  • Eggs: As called for on the cake mix box (usually 3).
  • Oil or melted butter: As called for on the box (usually 1/2 cup).
  • Liquids: Replace the water on the box with reserved pineapple juice plus water to equal the same amount (usually 1 cup).
  • Vanilla extract: 1 teaspoon, optional but adds warmth.
  • Cooking spray or parchment: To line and grease the slow cooker.

Method

  1. Prep the crockpot: Line the slow cooker insert with a wide strip of parchment paper that overhangs the sides for easy lifting. Lightly mist with cooking spray. This prevents sticking and helps you invert the cake later.
  2. Make the topping: Pour the melted butter into the bottom of the lined insert. Sprinkle the brown sugar evenly over the butter to form a sandy layer.
  3. Add fruit: Arrange pineapple rings over the brown sugar. Tuck a cherry into the center of each ring. If using tidbits, scatter them evenly and dot cherries throughout.
  4. Mix the batter: In a large bowl, combine cake mix, eggs, oil or melted butter, vanilla, and enough pineapple juice plus water to match the liquid amount on the box. Stir until just combined. Do not overmix.
  5. Pour and level: Gently pour batter over the fruit. Use a spatula to smooth the top so it cooks evenly.
  6. Cook low and slow: Cover and cook on Low for 2.5 to 3.5 hours, or until the center is set and a toothpick comes out with a few moist crumbs. If your slow cooker runs hot, start checking at 2 hours.
  7. Prevent condensation: If moisture drips onto the cake, lay a clean kitchen towel under the lid (not touching the cake) to catch condensation. Keep it away from the heating element.
  8. Cool slightly: Turn off the heat and let the cake sit uncovered for 15–20 minutes. This helps it firm up for a cleaner slice.
  9. Invert or serve: Lift the cake out using the parchment overhang. Place a platter over the cake and flip to reveal the glossy pineapple top. If you’d rather not flip, scoop warm slices right from the slow cooker.
  10. Optional finish: Brush any extra juices from the insert over the top for added sheen and flavor.
