Ingredients

  • Apples: 6–7 medium apples (about 2 1/2–3 pounds). Honeycrisp, Granny Smith, or a mix.
  • Brown sugar: 1/2 cup, packed.
  • Granulated sugar: 2 tablespoons (optional, for extra sweetness).
  • Cinnamon: 2 teaspoons.
  • Nutmeg: 1/4 teaspoon.
  • Salt: 1/4 teaspoon.
  • Cornstarch: 1 1/2 tablespoons (or 2 tablespoons flour) to thicken juices.
  • Lemon juice: 1 tablespoon (or 1/2 lemon, juiced).
  • Vanilla extract: 1 teaspoon.
  • Butter: 2 tablespoons, melted, plus extra for greasing.
  • Refrigerated cinnamon roll dough: 2 cans (8–10 count each), with icing included.
  • Optional add-ins: 1/2 cup chopped pecans or walnuts; caramel sauce for drizzling.
  • Serving: Vanilla ice cream or whipped cream.

Method

  1. Preheat and prep: Heat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or nonstick spray.
  2. Peel and slice apples: Peel, core, and slice apples into 1/4-inch thick slices. Aim for even thickness so they cook at the same rate.
  3. Mix the apple base: In a large bowl, toss the apples with brown sugar, granulated sugar (if using), cinnamon, nutmeg, salt, cornstarch, lemon juice, vanilla, and melted butter. Stir until every slice looks glossy and coated.
  4. Fill the dish: Spread the apple mixture evenly in the baking dish. Press down lightly to create a mostly even layer.
  5. Prep the cinnamon rolls: Open the cinnamon roll cans. Cut each roll into quarters (bite-size pieces). If your dough is very sticky, lightly flour your knife.
  6. Top the apples: Scatter the cinnamon roll pieces evenly over the apples. Don’t press them in—they need space to puff and brown.
  7. Optional crunch: Sprinkle chopped nuts over the top for extra texture.
  8. Bake: Place on the center rack and bake for 35–45 minutes. The apples should be tender and bubbling at the edges, and the cinnamon roll pieces should be golden on top. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
  9. Rest, then glaze: Let the cobbler rest for 10–15 minutes to set the juices. Warm the included icing packets slightly and drizzle over the cobbler. For extra indulgence, add a light drizzle of caramel sauce.
  10. Serve: Spoon into bowls while warm. Add vanilla ice cream or whipped cream. Enjoy the gooey goodness.
