Prep the crust: Place the pie dough in a 9-inch pie plate. Crimp the edges. Chill for 20 minutes to help prevent shrinking.
Preheat the oven: Heat to 375°F (190°C).
Place a baking sheet on the middle rack to preheat—it helps the bottom crust set nicely.
Optional blind bake: If you like a crisper bottom, line the chilled crust with parchment, fill with pie weights, and bake 12 minutes. Remove weights and bake 5 more minutes. Let cool slightly.
Mix the dry ingredients: In a bowl, whisk brown sugar, cinnamon, ginger, nutmeg, cloves, salt, and cornstarch to break up any lumps.
Whisk the custard: In a larger bowl, whisk pumpkin puree, apple butter, eggs, evaporated milk, vanilla, and melted butter until smooth.
Sprinkle in the dry mix and whisk just until combined. Don’t overmix.
Fill the crust: Set the pie plate on the hot baking sheet. Pour in the filling.
Gently tap to release air bubbles.
Bake: Bake at 375°F for 15 minutes, then reduce heat to 350°F (175°C) and bake 25–35 more minutes. The edges should be set, and the center should wobble slightly like gelatin.
Cool completely: Let the pie cool on a rack for at least 2 hours. This helps it finish setting and makes clean slices.
Serve: Slice and top with lightly sweetened whipped cream or a dusting of cinnamon sugar.
